TASTING:

Very harmonious, pure and complex melted nose, between minerality and red fruits (cherry), finely spicy (cardamom and vanilla), a hint of liquorice, cocoa bean, laurel and resinous. Mouth of great balance, elegance and freshness, with a complex aromatic depth and melted spicy tannins with an intrinsic freshness, a dynamic, powdery tannins, present but always very fine.

PERFECT AGREEMENTS:

Lamb tagine and onion compote, beef bourguignon, stew.

PLOTS, TERROIR, CULTURE:

North of MAS AMIEL, the Caribou plot forms a 2 HA cirque. Its soil contains highly decomposed calcoschists. This schist and clay gravel is found over 1.5 m deep before reaching the bedrock. The favorable alchemy: soil, south-east facing exposure and the age of the vines gave birth to the first Maury Sec in history.
Old vines, trained in goblet form, over 75 years old, cultivated 100% biodynamically. Soil maintenance by "Rambo", a Comtois and Vagabond horse, and use of biodynamic preparations. The yield is 20 hl/ha for these old Grenache and Carignan vines.

GRAPE VARIETIES:

Dating from 1949, the Cabirou plot has the particularity of being planted with mixed grape varieties with a dominance of Grenache black (80%) and Carignan (20%).

GRAPE HARVEST:

Manual, double manual sorting of the bunches on conveyor belt and vibrating table, destemming.

VINIFICATION:

In 50hl stainless steel cuve.

BREEDING AND BOTTLING:

breeding in concrete cuve until bottling.

GUARD TIME:

10 to 15 years old
