TASTING NOTES:

Red with deep dark ruby hints. Aromas evoking the very best Grenache wines, including fresh fruit, grapes, cherry, and sloe berry with light menthol notes. On the palate, expressive cherry notes come to the fore, joined by a creamy and smooth texture balanced by refreshing acidity. The taste evokes Grenache from vines planted in a schist soil at Mas Amiel.

FOOD PAIRINGS :

This pure Grenache can be served with a beef tataki, scorpion fish or roasted capon.

TERROIR AND VINE MANAGEMENT :

Several plots of Grenache Noir planted in a limestone-schist terroir in the districts of Cabirou and Devèze. Organic and biodynamic (100%).

GRAPE VARIETIES:

100% Grenache Noir.

GRAPE HARVEST:

Hand-picked, manual double sorting of the grape bunches on a conveyor belt and a vibrating table, destemming.

WINEMAKING :

In 50-hl stainless steel vats. Natural yeast, without winemaking additives or SO2. Gentle extraction by infusion, entirely respecting the textures of the fruit and the soil.

MATURATION AND BOTTLING:

Ageing in concrete vats until bottling. No addition of SO2 even before bottling.

Smoky meaty on the nose. Wonderful black cherry and very direct, very intent. Blood orange and peony layering through crushed-stones minerality and liquorice root. The juiciness builds and builds, burying the tannins, and then the finish comes through and it feels like plums skins and leaves the lingering perfume of iris behind.
